PEACH SALSA

1 cup diced firm ripe peaches cubed 3/8 in by 3/8 in OR 1 cup drained and diced canned peaches, save juice 4 tbs. fresh lime juice 1/4 tsp. salt 1 to 2 tbs. brown sugar or honey, adjust to your taste 1/2 cup diced red sweet pepper 3/8 in by 3/8 in 1/2 cup diced & seeded cucumber 3/8 in by 3/8 in OR 1/2 cup diced & seeded zucchini 3/8 in by 3/8 in 1/4 to 1 small Jalapeno pepper, adjusting to your taste 1/3 cup very finely chopped sweet onion 1 tbs.. cilantro or mint leaves chopped very fine, (optional) 1 tsp. BIG DAVE'S Special spice

Recipe makes 2 cups of Mild to Hot Salsa.
There is enough spices to make 10 individual recipes.
This salsa will keep for about 6 days in the refrigerator.
